The client

Delizia S.p.A. is one of Southern Italy's leading industrial dairies, based in Noci (BA), Puglia. Founded in 1992 by Giovanni D'Ambruoso, the company produces and markets fresh and aged cheeses under the Deliziosa and L'Aia Vecchia brands.

With approximately 420 employees and revenues of around €161 million (2025, growing year-on-year), Delizia is a large enterprise with national GDO distribution and export ambitions. Its range includes mozzarella, burrata, stracciatella, ricotta, nodini and Caciocavallo Silano DOP. In 2025 the Noci plant is being doubled in capacity to meet growing demand for burrata and stracciatella.

The challenge

Production data not verifiable in real time

Dairy production requires continuous monitoring of critical parameters (temperature, humidity, processing times). Without an integrated system, data verification happened after the fact, risking non-conformities.

Quality and traceability under pressure

With over 420 employees and multiple production lines for mozzarella, burrata and stracciatella, ensuring the quality and traceability of every batch required slow, error-prone manual processes.
